Breaded Paleo Chicken Strips

Kid Friendly!!  Your kids will love these and so will you!

These chicken strips are great with honey mustard.  To make your own just mix equal parts dijon mustard and honey.  Make as much as you like, just use equal parts. These chicken strips will store great in the fridge and you can just reheat.

Instructions

  • 1. Preheat oven to 400 degrees
  • 2. Prepare baking sheet with parchment paper
  • 3. Rinse and pat dry chicken and cut into strips that are fairly equal in size
  • 4. In a large bowl add almond flour, sea salt, garlic powder, paprika, pepper- whisk to combine.
  • 5. In a separate bowl combine eggs, almond milk and whisk
  • 6. Using a fork, skewer a strip of chicken, then dip into egg mixture and let the excess run off.
  • 7. Next put egg dipped chicken into flour mixture and coat, shake off excess and repeat egg dip and flour dip one more time.
  • 8. After the strips have been dipped in egg and flour twice place on baking sheet.
  • 9. Bake for 16-18 minutes. Check a strip for doneness by cutting in the middle.
  • 10. After taking out of the oven use a spatula and place tenders on a cooling rack. This last step keeps the bottoms from getting soggy.
  • 11. Enjoy!
