Grain-Free Bacon, Lettuce, and Tomato Sandwich

One of the things I really missed when I started eating grain-free were Bacon, Lettuce, and Tomato Sandwiches.  This time of year when the tomatoes are really coming in season there is nothing like a BLT!  With my easy grain-free bread you don’t have to miss out when the rest of your family is indulging. 

File Jul 10, 4 25 50 PMIf you haven’t ever cooked bacon in the oven before, I’m telling you it is the only way to go!  Soooo much easier and you don’t have the huge grease mess when you are done. I tell you how below.

Instructions

  • 1. Preheat oven to 400 degrees.
  • 2. Line a large baking pan with edges with heavy duty foil and put the foil up over the edges of the pan. I found if you crinkle the foil up a bit it helps to capture some of the grease.
  • 3. Lay out bacon in single file. It's okay if they are touching, they will shrivel while cooking. Cook for 20-30 minutes depending on how crisp you like your bacon, but start checking at 20 minutes.
  • 4. When the bacon is cooked to your liking, remove from oven and transfer bacon to a paper towel lined plate to soak up the excess grease
  • 5. If you haven't made the easy grain-free bread yet, you will need to do this. You can always make this the day before.
  • 6. Slice bread, slather with Primal Kitchen Mayo and place large tomato slices and bacon on bread.
  • 7. Lay a few pieces of Boston Bibb Lettuce or whatever lettuce you like on top of the bacon and tomatoes.
  • 8. This is the good part, eat and enjoy!
