This soup is wonderful as we head into colder weather. Very easy to make and you can just put it in your crock-pot and let it cook while you are gone during the day. You can add in other vegetables if you like, but I wanted to keep this soup SCD and Paleo friendly.

Ingredients

1 pound ground beef- (I use grass fed ground beef)
1 cup chopped onion
1 jar 24-30 ounces meatless marinara sauce (I use Newman's Own marinara sauce)
2 cups water
1 cup beef broth (I use Organic Imagine Beef Stock)
1 can diced tomatoes (I use Costco's organic diced tomatoes)
1 bag frozen mixed vegetables (I use peas and carrots)
1 cup chopped celery
1 tsp. pepper
1 tsp. sea salt

Instructions

Chop 1 cup onions and 1 cup celery.
Combine onions and ground beef in skillet and cook until meat is no longer pink. Drain grease and transfer to slow cooker.
Add spaghetti sauce, water, beef broth, frozen veggies, tomatoes, celery, salt & pepper to slow cooker
Cook 4-6 hours on low or until the vegetables are tender
This soup is wonderful with grated parmesan cheese on top
