One of the things that I heard over and over again as I was battling my Ulcerative Colitis was that what I was eating didn’t matter and it certainly didn’t have anything to do with my digestive disease. I asked repeatedly and heard the same thing from four different gastroenterologists. The two options I was given to control my U.C. were drugs and or surgery to remove part of my colon. Tried the drugs and lots of them and none of that worked for me, in fact I got worse. You can read my whole story here of recovery and remission here.
What I found through lots of research and lots of cooking and baking was that,
FOOD DOES MATTER!!
I am including a video from Dr. Chey at the University of Michigan. It is so heart warming for me to hear someone in the gastroenterology field talk about nutrition as it relates to IBS and digestive disease. You can listen to Dr. Chey here. I know we have a long way to go, but more and more the nutrition aspect of these diseases is being considered and becoming more main stream. I also included a video from Dr. Terry Wahls. If you don’t know her story, it is pretty amazing!! She went from being almost completely disabled from MS to an incredible recovery and all by changing her diet. Listen to Dr. Wahl’s Ted Talk here. After my experience, I am convinced that not only digestive disease, but Type II diabetes, heart disease and most of the common western diseases could be controlled and drastically reduced by a change in diet.
