Glorious Guacamole!

The star of this guacamole is the avocado.  Did you know that avocados are one of the most nutrient dense foods you can eat?  Avocados have nearly 20 Vitamins, Minerals, and Phytonutrients.  Avocados are full of good fat and fiber so they will help you stay full longer.   Avocados are not just for guacamole, I put them in smoothies, chocolate pudding, salads, and the list goes on and on. 

I would encourage you to buy organic produce when you can.  The Environmental Working Group just came out with their Dirty Dozen and Clean Fifteen List for 2019.  You can access the list here and print a copy to keep with you when you are shopping.  If a fruit or veggie is on the Dirty Dozen list, I would buy organic, but if it’s on The Clean Fifteen list you could buy conventional. https://www.ewg.org/foodnews/

Instructions

  • 1. Wash avocados and half and scoop the avocado out. Tips for how to get the pit out of the avocado. Add avocados to a medium size bowl and mash with a fork or potato masher. I like to leave mine a little chunky.
  • 2. Chop up red onion until finely diced and add to mashed avocado
  • 3. Chop Roma tomatoes chunky and remove seeds and add to mashed avocado
  • 4. Juice one lime into avocado mix and stir
  • 5. Add sea salt to your taste at least 1/4 teaspoon and I like a little more than that.
