Jackie’s Tip: I use the Magic Line loaf pans that are 7.5 inch by 3.5 inch, they can be found on Amazon. I have found that this size of pan bakes almond flour very nicely.

Ingredients

3 cups almond flour
1 Tbsp. coconut flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup warmed honey
3 eggs
2 very ripe mashed bananas
1/2 cup unsweetened shredded coconut
1/2 cup dark chocolate chips (anything 70% cocoa is fine) For SCD Diet leave out chocolate

Instructions

Preheat the oven to 350 degrees
Prepare two small loaf pans. Grease the sides and bottom of the pans with melted coconut oil or ghee and put parchment paper on the bottom of the pan.
Mix the dry ingredients, almond flour, coconut flour, baking soda and salt with a whisk in a large bowl.
Mix the wet ingredients, honey, eggs in a separate bowl with a whisk.
Mix the wet ingredients into the dry ingredients.
Fold in the mashed banana, shredded coconut and dark chocolate chips
Fold the batter into the prepared pans and bake for 45-50 minutes, until a toothpick or fork comes out clean in the middle of the loaf.
Remove the loaves from the oven and allow them to cool in the pans for 15-20 minutes.
Use a knife to go around edge of loaf pan and turn upside down to remove bread.
Let cool on a wire rack and serve and enjoy.
