delicious and healthy chocolate chip cookies

Amazing Chocolate Chip Cookies!

I have been working on a really great chocolate chip cookie and I am getting thumbs up from all my taste testers on these. I dare you to eat just one!

These cookies can easily be made dairy-free by using ghee or simply leaving out the butter.  I made these without the butter and they still tasted really good. When I bake with chocolate, it is always dark chocolate. If you look closely at most milk chocolate the first ingredient is sugar. Try to find dark chocolate that is 70% cacao.

Instructions

  • 1. Preheat oven to 350 degrees
  • 2. Line a cookie sheet with parchment paper
  • 3. Add dry ingredients, almond flour, coconut flour, baking soda and sea salt to food processor and pulse until mixed. You can also use a bowl and a hand mixer.
  • 4. Add wet ingredients honey, vanilla, butter or ghee, and egg to food processor and pulse until blended.
  • 5. Remove blade from food processor and fold in chocolate chips by hand.
  • 6. I used a small ice cream scoop with a lever to place dough on parchment lined cookie sheet. The one I used was about an inch wide.
  • 7. Bake for 10-12 minutes. They should be golden brown on top and bottom.
  • 8. Remove and let cool on baking sheet for 5 minutes and then immediately transfer to a cooling rack.
  • 9. Enjoy!
