Dairy-Free Vanilla Ice Cream

If you haven’t ever sweetened anything with dates, I think you will be pleasantly surprised at how good they taste and as a bonus, they are full of minerals and fiber.  The dates will also act as a thickener for your ice cream making it really creamy.

If you haven’t invested in an ice cream maker yet, I really love the Cuisinart to make ice cream.  It is super simple to use and only takes about 15-20 minutes to churn your ice cream and really easy to clean up!

Instructions

  • 1. Add dates to a small bowl and fill with very warm water to completely cover dates. Soak for 5-10 minutes and then pit dates.
  • 2. Add dates and the rest of the ingredients to a Vitamix or good blender. Blend until everything is mixed really well and dates are completely mixed in.
  • 3. Chill ingredients in blender in fridge up to two hours or longer
  • 4. Remove mixture from fridge and blend one more time so mixture is mixed really well.
  • 5. Pour mixture into ice cream maker and churn for 15-20 minutes or until ice cream is set.
  • 6. We usually eat this right out of the ice cream maker, but you can also freeze.
  • 7. To freeze, smooth ice cream in a freezer safe container and cover with freezer safe lid.
  • 8. When you are ready to eat out of the freezer, remove from freezer about 20 minutes before you want to eat to allow it time to thaw as it freezes really hard.
  • 9. Enjoy!!
